Lammkeule — Leg of Lamb

Als wir vor zwei (?) Jahren bei Corrine und Tim Sylvester gefeiert haben und dabei einen fantastischen Braten aufgetischt bekamen, fasste ich einen kulinarischen Vorsatz fuers neue Jahr: "BRATEN"!

Damit war gemeint, dass ich mich mal an groessere Stuecke Fleisch ranwagen wollte. Inzwischen habe ich - mit einiger Anlaufverzoegerung - das eine oder andere Mal einen Braten zubereitet. Groessere Katastrophen waren die Ausnahme. Vor ein paar Wochen hatte ich schon einmal eine Lammschulter im Ofen geschmort, lecker! Gestern erstand ich ein schoenes Stueck von der Lammkeule, dummerweise habe ich aber das Rezept letztes mal nicht aufgeschrieben.
Irgendwie habe ich mir das wieder zusammengelogen, und das Ergebnis war so lecker, dass ich beschlossen habe, das Blog jetzt auch ab und zu als Kochbuch zu missbrauchen.

Lammkeule mit Pellkartoffeln und Spitzkohl

Zutaten:
ca. 700 g Lammkeule (ohne Knochen)
Olivenoel
2 Knoblauchzehen
1 TL Pfefferkoerner
Rosmarin
Thymian
Salz
1 Zwiebel
1/4 L Gemuesebruehe
1/4 L Rotwein
50 ml Sahne

Dazu:
Kartoffeln (mit Kuemmel)
und Spitzkohl

Zubereitung:
Knoblauch, Pfefferkoerner, und Kraeuter mit Salz und Olivenoel im Moerser zerdruecken und zu einer Marinade verarbeiten. Das Fleisch abtupfen, salzen und dann mit der Marinade einreiben. Zwei Stunden im Kuehlschrank marinieren. Ofen auf 160 vorheizen. Lammkeule mit Faden zusammenbinden und in der Pfanne von allen Seiten in Oel anbraten. Fleisch zur Seite legen. Zwiebel hacken und in Pfanne in etwas Oel anschwitzen, dann mit Bruehe abloeschen und in den Schmortopf giessen. Wein dazu und dann das Fleisch hinein, Deckel drauf und fuer etwa 1.5 h in den Ofen.

Etwa 20 min bevor Fleisch fertig wird die Kartoffeln mit Kuemmel und Salz aufsetzen. Auessere Blaetter vom Spitzkohl entfernen, vierteln, Strunk rausschneiden und grob hacken. Mit Duensteinsatz etwa 5-10 min im Dampf garen.

Wenn das Fleisch seine Zeit im Ofen abgesessen hat, herausnehmen und 10 min ruhen lassen. Den Sud durch ein Sieb geben und im Topf mit etwas Speisestaerke andicken. Schuss Sahne unterruehren - fertig!

Two years ago now, at a New Years Do at Corinne and Tim's we were treated to a fantastic roast. This was when I made a culinary new year's resolution: "Big sides of meat!"
With some considerable delay I have recently started practising my roasts. A few weeks ago I made a lamb shoulder, which was quite ok, only I forgot to write down the recipe. Somehow I made it up again today, and since it was very delicious, I have decided to use the blog as a recipe repository from now on, at least I will know where to find the protocol.

Leg of lamb with new potatoes and pointed cabbage

Ingredients:
approx 700 g leg of lamb (deboned)
olive oil
2 cloves of garlic

1 Tbl spoon black pepper corns

rosmary

thyme
salt
1 onion
1/4 L veggie stock
1/4 L red wine
50 ml single cream

Serve with:
New potatoes (boil with caraway seeds)
and pointed cabbage

Using a pestle and mortar make a paste of the garlic, herbs, peppercorns, oliveoil and some salt.

Dab dry the meat, season with salt and then marinate with the paste. Keep in the fridge for a couple of hours. Preheat oven to 160 (Celsius as we know it or centigrade for you Imperials!). Tie the meat into a roll with cotton thread and seal from all sides in some oil in a hot frying pan. Put meat aside, shallow fry chopped onion until golden, then add veggie stock. Transfer stock and onions into casserole dish add wine and meat, replace lid and put into oven for 1.5 h.

About 20 min before end of roasting time, start boiling the spuds. It is really nice to boil them unpeeled (if you can get them nice and clean) with some caraway seeds in the boiling water. Remove outer leaves of the cabbage, cut into quarters, remove stalky bit and chop coarsely. Steam for 5-10 min, season to taste.


When meat is done, remove from oven and set aside to rest for 10 min. Strain juice through sieve and thicken in a pot with cornflour. Add a dash of cream. Done!
